I made this for lunch today and it was so good, I thought I'd share the method: Grill some chicken pieces (I spiced mine with some cajun spices and put it on the Foreman grill) Add a zoodled zucchini to a pan and start cooking with a little water or chicken broth and a little salt. When zucchini is tender, add: Splash of coconut aminos (or to your taste) 1 T. peanut powder 1 LLC cheese wedge 1/2 tsp ground chilis (I use the Sambal Oelek ground chili paste) 1 tsp apricot all-fruit jam 1/8 Tsp garlic powder 1/4 tsp ginger powder 1 tsp. onion powder adjust salt You may need to add a bit more water to get the sauce to cream up right. I didn't need any other thickening, probably because the peanut powder took care of that. This makes the most lovely, creamy sweet,spicy, umami sauce. Its hard to imagine that it could be this good and be virtually fat-free. You can add a tiny bit of toasted sesamie oil if you like, but I just saved my oil allotment to use in my trimmy. Add grilled chicken on top ( or mix in, like I did. ) TIP: If you don't have a spiralizer to zoodle-fy your zucchini, I found that I can get the same kind of cut by using the fine julienne blade on my mandolin. And its a lot quicker than the hand-held cone spiralizers.
