We just moved and our neighbors have a fig tree that covers theirs and ours back fences. It is huge and we are told it is at least 20 years old. It is producing figs by the bucket fulls. Anyone have any recipes they would like to share that are THM friendly?

I'd love to see some too. I've only ever eaten figs dried.

Figs will vary a bit, nutritionally, from one type to the next. They are deliciously sweet, but also contain a good amount of natural fiber. Eaten fresh or frozen, they can be used in E setting... but, as with all fruits, moderation is important. The frozen ones, from Costco; average 9 NET grams of carbs per fig -- eating too many could quickly put you "over" on your carbs.
