Yes, I know it's called a "muffin," but is toooo huge to be a muffin.
2T oat fibre 2T whey powder 1T punkin pie spice mix 3/4 t glucomannan 1/4 t double-acting bp (it's the only kind I make) 2 t Gentle Blend or 2 doonks Reb-A stevia powder 1/3 C egg whites from a box or 2 egg whites (usually medium eggs) 3-4 T water (or more!)
I mix the dries slowly with a small whisk. Then, I add the egg whites and water (3T to start). When I mix in the wets and they stick in one big blob on the whisk . . . I add more water. I keep doing that until it looks like cake batter. I nuke it all for 75 seconds and then let it cool for 1 minute or so (I don't like to burn my hands on the bowl)
Oh, the bowl I use is just a plain old pottery cereal bowl. I have divided this recipe over 2 fruit nappies and served one each to my husband and myself as "dessert."
Also, I have found that I need the 5T of "flour" to reduce the impact of the oat fibre. As is, the recipe contains more fibre than I need. As well, others who have posted using 3T oat fibre (taking out the cocoa the same as I have) I figure must be under 51 years old. Over 51 females shouldn't have more than 21g dietary fibre per DAY.

queen: Probably a good idea to start a topic asking about it. Generally, I think they want you to use the whole grains rather than something made from brown rice flour, but maybe there's more to know about it.

queen: If you are in weight loss mode, you avoid them. Maybe throw in one or two a month if you aren't losing well. It can help to shake things up and get losses started again.
