I've made the Peanut (with defatted peanut flour) version of the Choco pudding, but can't seem to be satisfied with my outcome. It's not coming out with a full, satisfying taste to it. I feel like I need more peanut flour (maybe double?), but I don't want to spoil the FP effect. Anybody else run into this with the pudding?
I ADORE the chocolate! Maybe I should just stick to it.....

Do you use the full Tbs of peanut flour and make sure to add a pinch of celtic sea salt. I think that salt makes the difference. Have you tried it with 1 tsp of peanut butter? Maybe you'd like it more that way.

My favorite way to eat thepeanut pudding is with the choco pudding, layered up in a parfait glass with a squirt of gff ready whip . The most awesome and very eye catching dessert is to put a third layer of skim ricotta sweetened up with stevia and flavored with vanilla with the puddings. It's divine indeed.

I would love to see a picture of this. It sounds very yummy. I should try that. I'm a dessert lover.

How long does the pudding stay good in the fridge?

I would say a good 3 days, but have left mine in for as long as 5-7. It has a bit of a funny consistency, but I didn't notice anything else. Since it's made from almond milk and everything else in it is shelf-stable, I would guess it would go bad as fast as the almond milk would.
