I am wanting to make a pressed crust for cheesecake, but I do not have any of the pressed crust (pg 323-324 in the cookbook) ingredients: unsweetened shredded coconut, peanut flour or almond meal.
What can I substitute for those ingredients? I've googled and found nothing when putting in THM pressed crust.
Any NSI pressed crust recipes? I don't have the money to buy any more special ingredients.

Good morning! I wish that I could look into your pantry. Since that isn't possible, I'll brainstorm a little bit. You could probably sub most nuts/seeds by blending them into a meal/flour, cocoa powder used as a flour sub, coconut flour, flax seeds blended into a meal might work, baking blend or one of the many homemade versions (think: Briana Thomas) or sans crust. I often skip the crust and enjoy the dessert just as much as I would have otherwise. That wasn't much help, so I look forward to what the other ladies share. Blessings, Stacy

When I make a cheesecake, I just butter the pan and swirl around some flax meal on it. Its enough of a crust for me.
But you can mix some butter and sweetener into any kind of ground nut flour. What do you have on hand?

Idk if this is an option for you, but I'm not a crust fan in general so I didn't want to waste my ingredients. I made the wiggle mallow pie crustless. I'm sure cheesecake would do well as well.
