I just got the brainstorm tonight that with a few modifications, my breakfast muesli can be turned into an "E."
1/2 cup old-fashioned oats 1/4-1/3 cup 0% Greek Yogurt 1 apple shredded 1 cup (aprox) almond milk small sprinkle of walnuts 1 T. lemon juice blueberries to taste other diced fruit to taste stevia to taste
I mix this all up the night before, and all I have to do the next morning is add a little milk to make the consistency that we like.
Does this all look ok? I realize additional fruit outside of berries would have to be conservative amounts.
Oh, and my husband and I usually finish this amount for breakfast. It's a nice amount for the both of us, though my husband usually has toast with his.

Do you mean you split the recipe? It sounds great, but the full apple and the oats in one serving is pushing toward the E carb limit, doesn't leave a lot of room to add blueberries. But... it could be done with just a few. Does sound yummy but I would stick to one half apple along with the oats.

Yes, this would be a serving for two - so each person would be eating 1/2 an apple, and 1/4 cup dry oatmeal.

thanks for posting this. I LOOVE my muesli in the summertime w/ fresh strawberries ect. Was wondering how I can still make it work:-) Altho...I do have a new love w/ the greek yogurt/berry toppings swirled in.
