~~~~Peppermint Patties~~~~~ Mint Filling: 2oz cream cheese, softened 1-2 droppers of liquid NuStevia (The liquid is just my preference. You could use stevia powder, or Truvia for a granulated sugar texture) few drops of peppermint oil (I used essential oil, I suppose candy flavoring would work too.) 1T coconut oil, melted Warm water, as needed Mix well, first 3 ingredients in a small bowl. Add melted coconut oil and stir to combine. Stir in warm water if you are having trouble mixing everything together. Taste to make sure the peppermint flavor overpowers the cream cheese flavor, but is not too strong. We aren't making "Sinus Clearing Patties" Form desired amount of disks (I made 6) and place on wax paper in the freezer. Freeze until hard. Chocolate: 1 batch of Skinny Chocolate, cooled, but still liquid. Remove frozen disks and dip in Skinny Chocolate (using 2 forks). If the disks are frozen enough, the chocolate will harden nearly on contact. Dip disks in chocolate 3-4 times to make the coating thick enough. Place disks back on wax paper and pop in freezer, or enjoy one now. Alternately, you could pour some Skinny Chocolate into a cupcake paper (in a muffin tin for shape), drop in a peppermint disk, and top with more skinny chocolate. Hope you enjoy!

Can the 1/3 fat cream cheese be used for this? I know it's a bit softer so I wasn't sure.

Can the 1/3 fat cream cheese be used for this? I know it's a bit softer so I wasn't sure. That's actually what I used....I guess I should have mentioned that! If it's frozen hard enough I don't think it matters much. Enjoy!

Did you use peppermint ESSENTIAL OIL. I have been wondering if it is edible. Will any brand work?

It's most likely the kind of peppermint oil you find in the candy making section of a Joann's or other craft store.

Did you use peppermint ESSENTIAL OIL. I have been wondering if it is edible. Will any brand work? Yes, I did use essential oil (not candy flavoring oil). Either would work (and I suppose any brand would work too!), just adjust to your taste.

I tried this yesterday, went ahead and made a big batch using the entire 8oz brick of 1/3 reduced fat cream cheese. I didn't want to end up with those Sinus Clearing Patties (he he!) so I was cautious and ended up with it tasting a little too cream-cheese-y, but they are still yummy. I think I'll try adding some peppermint extract to the skinny chocolate batch that I make today to finish coating them. Great idea, thanks for sharing it!
