Lettuce salad with cucumber, carrot, and peppers, topped with quinoa cooked in fat-free chicken broth, mixed with a bit of parmesan cheese. I quickly panfried the salmon in 1 tsp. coconut oil after marinating it in worchestershire sauce, salt, and lemon juice. I dressed it with a couple Tbsp. of light balsamic vinaigrette. So amazingly good, and filling for this nursing mama!!
