Making Fotato Soup tonite for the first time. Want to make enough to feed family of 6 (knowing that a few may not approve!). Would you triple or quadruple the recipe? Or more?

I would quadruple. Better to have leftovers than not enough. When I make it, I use half the chicken broth because I think it's a bit too watery. I also blend the laughing cow cheese in, instead of melting because I think it comes out smoother.

If it is too watery, you can always thicken with more gluccie using the shake and whisk method.

I have thickened ith glucose but I think it gives more of a smooth mouth feel stead of the grainy one you get with real potato soup. It's all about tricking the hubs!

I think triple would be plenty. It really is a filling soup. But having leftovers is wonderful too.

Made this for the first time today for lunch! Yummy! I had to convince the Hubster to have some, though, as he turned up his nose at it but after trying it he had a bowl and a half! lol
