Does anyone have a decent frosting recipe? (not chocolate, not cream cheese) Just plain old vanilla. I am not satisfied with my experiments using Truvia or NuNaturals so far, even though they work great in chocolate and cream cheese frosting. Thanks!

I was reading about a sweetener called Swerve and they have a Confectioners Style that looks like it will work. Has anyone used it? Just curious.

You could try this recipe: 1/2 cup heavy cream 1 Tbsp butter (soft) 1 tsp vanilla extract stevia to taste - 5 drops of liquid stevia, a few shakes of Nustevia pure extract, or a few tsp of truvia ground in a coffee grinder would be good (you don't want the truvia to be grainy)
Mix all of the ingredients together on low speed. At first it will get foamy like whipped cream, but if you keep mixing it should become an icing consistency.
This recipe doesn't make a whole lot. You could easily double it, or multiply the ingredients by however much you want.

No, but you could try swerve. It is on plan , basically just erythritol that has had the cooling effect removed. A lot of people like it. Emily's recipe looks good.

I wonder if you could carefully fold in egg whites beaten with cream of tartar to extend the recipe a little??

It went straight to butter, essentially, with the butter and the whey separating. It never seemed to pass through a whipped cream stage. I never got it to a uniform consistency. Erythritol(which is where the 5g comes from) is a sugar alcohol and has zero effect on blood sugar which is why it's okay to use.

Maybe I'll try again tomorrow. Thanks. Did you use store-bought heavy whipping cream, or was it fresh cream that perhaps you separated from your own milk? Sometimes fresh cream has this problem if it still has some milk left in it. Or perhaps it simply needs to be whipped at a lower speed, and for less time? So sorry it isn't working right!
