Here's a dish that our whole family enjoys, that I believe I would count as an E meal, because of the sweet potatoes. My husband is from the Philippines. This dish is from one of Philippine cookbooks I use, so he can have a "taste of home" once in a while. Boiled Chicken with Vegetables 1, 2-3 pound chicken, cut into serving pieces 1/2 onion, cut into wedges 2 medium-size sweet potatoes 1 tablespoon peppercorns 1 teaspoon salt 1/2 small green cabbage 1 head bak choy 1 bunch chopped scallions Boil chicken in enough water to cover (I use some chicken broth too, for more flavor), with onion, potatoes, peppercorns and salt. When chicken is tender, add the cabbage, bak choy and scallions. Cook until vegetables are crisp-tender. Serve hot! (This recipe says it serves 4, but I find it can feed our family of 6. Adjust how you would like! I also prepare brown rice on the side, if my kids want to add that to the bottom of their bowl.)

Hi Paula. It looks declicious. For E, only the white meat, breast part of the chickens work to keep the protein lean and the fats lower. So this would be more of a crossover if using the whole chicken pieces. If you are close to goal weight that wouldn't matter but if you need to lose, you might want to make this recipe using chicken breasts. Of course it would be great as is for your growing children.

So am I right to gather that you can have sweet potatoes with chicken breast meat as long as there is no fatty, creamy type sauce on the chicken? How about dry Italian dressing mix on the chicken with sweet potatoes? I got the impression no sweet potatoes with any type of meat but would love to be wrong:)

Sweet potatoes are just a carb source for an E meal, so they can be eaten with lean meat like chicken breast, tuna, etc. You're right, just keep the fat in the meal within the E guidelines.

Paula, I am also married to a Filipino man. When I saw the title I thought you meant Chicken Adobo, but I see now that this is very different. I don't think I have ever tasted this. My man doesn't care for sweet potatoes so I probably will only put in enough for me (he will eat them occasionally), but I think otherwise he will really like this dish. Since I need to lose weight I will make it with chicken breasts. Thanks.
