Here is my Fuel Pull version of cake in a mug, but I make it in a bowl. Thought I'd share this here too, though posted it under E originally. I am pretty sure it is a fuel pull, though someone please let me know if it is not... =)
Also, it was not very pretty when I made it, hence no picture--I put it in a bowl I had eaten greek yogurt out of earlier that morning. Oops!
1/4 cup egg whites 2 heaping Tablespoons cocoa powder 2-3 Tablespoons xylitol (or truvia/stevia to taste) 1/2 tsp. baking powder 1/2 tsp. vanilla 1/4 cup vanilla glucomannan pudding 1 tsp. store bought coconut flour (or add more cocoa powder to thicken a bit)
Mix all together with a fork and microwave for about 3 minutes (but my microwave is not very powerful, so experiment)
The cake is very moist and spongy. I ate it with extra (warmed) gluc pudding on top (killer with raspberries too).

Thanks so much for sharing this! I used my own cottage cheese based vanilla pudding recipe and baked in the oven in 2 muffin tins at 250 for 20 minutes. It was so nice to have this as a change of pace during my 2nd Fuel Pull day of my Fuel Cycle. As long as I have pudding mixed up, this is pretty easy to make, and I see it in my future :-)

It's adapted from dashingdish.com/recipe/day-4-gingerbread-cookie-protein-shake/1/2 cup low-fat cottage cheese 1/2 cup water 2 T protein powder 1/2 tsp Vanilla extract 5-8 Ice Cubes (thicker with more) stevia to taste 1/2 tsp xanthan gum Mix it all in the blender. If you don't eat it immediately, it gets a bit thinner as the shaved ice melts.

Thank you SO much for sharing this recipe and it's variations. I'm doing an E-day and I tend to get hungrier on those days, so was craving the chocolate muffin in a mug (S). I added a little cinnamon to the pudding, which lent it an entirely new dimension. I let it sit for about 10 minutes to let it cool and the consistency and moistness was wonderful. BTW, I have a 1.48 KW microwave and three minutes was perfect. The next time I make it, I think I'll top it with the chocolate pudding and a couple of fresh strawberries. Thank you again!

I made this today with a fee tweeks:) I have made it the original way as well and always enjoyed it! I used defatted peanut flour in place of coconut flour. I used 2 tbls of canned pumpkin in place of the glucci pudding. I sprinkled a bit of cinnamon as well. Yummy!!!!Icing was greek yogart sweetened with stevia and pumpkin pie spice:)
