This is a recipe I found for spaggehti squash casserole. I'm confusing myself..how woul this meal need to be adjusted to make it an s or e? Thanks for any help ;D
•1 spaghetti squash, halved lengthwise and seeds removed •1 tablespoon vegetable oil •1 small onion, chopped •2 cloves garlic, chopped •1 teaspoon dried basil •2 plum tomatoes, chopped •1 cup (8 ounces) 1% cottage cheese •1/2 cup (2 ounces) shredded low-fat mozzarella cheese •1/4 cup chopped parsley •1/4 teaspoon salt •1/4 cup (1 ounce) grated parmesan cheese •3 tablespoons seasoned dry bread crumbs

I think that this is already pretty much S, with the exception of the vegetable oil (sub butter or coconut oil) and the bread crumbs (leave it out or sub S-friendly filler). And you could use fuller-fat cheeses if you chose to (though of course that would add calories).
With all the cheeses, I think it would be harder to make it an E. But someone please correct me if I'm wrong - I'm still new to trying to figure out how to E/S-ify things!

Could you use some Joseph's pita crumbs on top maybe???

OK. So this was Amazing! The kids loved it too! Jody, the pita would've been good but I don't have any. I also did not have mozzarella like I thought so we used a colby mix. I added ground chicken to the mix and we had it for a main dish.http://recipes.prevention.com/Recipe/spaghetti-squash-casserole.aspx here is the original if you'd care to see it. Hubby and 5 out of six kids give it 2 thumbs up
