I was kind of tired of the chocolate Muffin in a Bowl (never thought I would tire of something chocolate.) It isnt near as yummy as the Muffin in a Mug, so I decided to see if I could come up with a yummy alternate version. It turned out very yummy. I put a smear of stevia sweetened Greek yo and diced up 1 strawberry and it was like strawberry shortcake. I wrote it down in my book immediatly so I wouldnt forget. Here is what I did:
3 T oat fiber 1 t coconut flour 3/4 t glucomannan 1/2 t baking powder 3 t Truvia 2 egg whites (measured about 1/3 c) 1/4 cup water vanilla exract or other extract of your choice (I used caramel just for the yum factor)
Make it like the book, I did have to nuke mine longer (2 minutes), but I dont think my micro gets real hot. The chocolate one was fine a little doughy (fudgy) but I didnt want this one that way. I dont think 1 t of coconut flour will add a significant amount of fat or carbs to take it out of fuel pull. I loved it so wanted to share.

Oh yummy, this sounds great. I have been baking muffin in a bowl in my donut maker like Emily posted about. This version will be so pretty...& sounds yummy. I'm saving this for one of my FP breakfasts next week. Thanks for sharing!

After the donut post I so wanted to buy a donut maker! I started making things in my waffle maker because I didnt have a microwave. I ended up finding one with a "Free-works" sign on the side of the road. I picked it up and have been using it ever since for Muffin in a Mug. I have struggled with the "purist" ideals, but I end up spending the whole day in the kitchen and not homeschooling or training or discipling my kids like I should. So, I threw caution in the wind and grabbed that microwave and I have enjoyed a little "Drive thru Sue-ness". The kids are enjoying it too, thinking they are really junking out! Haha.

I forgot to put the 3/4 t of gluccie on the recipe. It is pretty much the same thing as the Muffin in a Bowl, only with 3 T oat fiber and 1 t coconut flour instead of cocoa powder.

I tend to lean more purist but it comes in waves...when life gets too busy I'm so glad I can be that drive-thru-Sue & still stay on plan. But I am addicted to that little donut maker, it makes me feel like I am getting a very naughty treat. These are silly little games I play with myself but it works, lol! I haven't figured out the pic thing yet either.

I just made it, although I did have to tweak it a little bit because I didn't have any coconut flour. Thank you so much for posting this! I put the Greek yogurt and strawberries and top and everything. My tweak was using 4 Tbsp oat fiber, and a few drops of coconut flavor. Yum!

That's fantastic. I have been playing with that recipe too. I wanted to save the version I have come up with for our next book but I can't help but share it with you now.
Store bought Coconut flour like peanut flour is defatted so yes, in small amounts it can work for FP's cool huh?
And me being the short cut queen that I am - I've started using egg white powder in my quick muffins. It is expensive but I was reading on lowcarbfriends that it gives great rise to baked goods and is so quick to use. I put a little money aside for a few months and bought some last week at Kroger. Deb El brand. It only takes 1 Tbs for a mini muffin or cake so it should last me a long time.
Mine is a Cinammon version and so amazing with the icing I came up with which was pretty much because I had bought the wrong sort of cream cheese.
For the FP muffin
2 Tbs oat fiber 2 Tbs coconut flour (store bought) 1/2 tsp baking powder 1/2 tsp gluccie 1 Tbs egg white powder Or (1/3 cup egg whites = 2 egg whites) 2 tsp Truvia and 2-3 shakes Nustevia (or if using nustevia alone, it would be like 5 shakes) 1 heaped tsp cinammon mix dry ingredients well then add water to make a cake batter consistency ( I didn't measure but about 1/2 cup) You'd need less water if you use liquied egg whites. I nuked in a ceramic cereal bowl for a small cake shape for 1 minute but you could bake in the oven for ten minutes in a ramekin if you don't do the micro thing.
And for the icing - incredible! And Fuel Pullish still!
I had mistakenly bought fat free cream cheese which I usually hate but I had non of my usual 1/3 less fat. So I took an ounce of so, mixed it with a couple of squeezes of fresh lemon juice and added 3 tsp ground Truvia (you could use nustevia)
I iced the cake with this and wow! Bursts of flavor and a surprisingly good texture to the cake. I made my Dad one of these when he visited yesterday afternoon and he couldn't believe it was low cal and low fat!
I love this so much, it is my new fave snack and I would eat it for breakfast with a cup of coffee but not enough cals for me since I am at goal weight. It's a perfect snack or dessert for me though. I also tried it with one Tbs coconut flour and 1 Tbs almond flour. That was good too, slightly moister and almost takes it into light S territory but even then, the muffin stays pretty low calorie.
So, I'm still going to put this in our next book, especially if others here like it.

It should definatly go in the new book. I cant wait for that to come out!! It has been fun seeing others being creative and tweeking or coming up with new recipes. I'll have to try your version out. Especially with the lemon cream cheese frosting!

I poured some in and it was too much so I had to add another ounce of cream cheese (which was 1/3 since I didnt have FF). So, it was extra delish, even though I probably put out of the FP department.

Did you use liquid whites? I don't know how much lemon, I'm going to make another today so will try to measure. I don't know if the concentrate is the same strength as real lemon juice though. I only have real lemon right now.
