Finally tried this again...of course I stuck with the 1 tsp of Truvia to balance out the bitterness of chocolate. This time I used about 8 coffee ice cubes and 6 small water ice cubes. Now it doesn't taste watery! I guess I just needed another flavor in there and xanthan gum too.

I can't figure out how thick this is supposed to be. Is it supposed to be super thick like soft serve icecream? (That would be awesome, by the way.) Thanks for the Vitamix tips. I'm going to try those. I have a vitamix and I couldn't get the frappa to turn out with the measurements in the book. I've changed it up and now have very good, and consistent, results. Into the blender I add enough almond milk and water to reach almost 2 cups (I vary the amount of each liquid depending on how much almond milk I have that day), a couple of grinds of salt, 2 heaping tablespoons of cocoa powder (I like mine really chocolatey), 1/2 teaspoon of guar gum (I don't like gluc) and then a scoop of whey protein powder. Blend that all up until it's smooth, and then I add in about 1/3c of either raspberries or strawberries and about 10 ice cubes from my ice maker. I blend that for about a minute, or until the berries and ice are completely crushed and blended.

You can do it to taste. I like mine thick. I start with a spoon and as it melts a little, switch to a straw.
