Thrilled to share this recipe for our dairy free Mamas. Leah Funk posted this to facebook with a picture but I cannot copy the picture. I know this is going to help so many with a dairy allergy. "Hey there I thought I would post my recipe for dairy free THM pancakes. Ok here it goes, 1 ground oats, 3 egg whites, 1/2 cup almond milk or water, 1tsp vanilla ,1/2 tsp sea salt,dash do nunaturals stevia. Blend well in blender.. I use a vita mix... But I think most blender would do, and cook using method in THM book. You may also add more liquid if the batter is too thick. This makes 8 good thick pancakes ... Please only eat 1 or 2 or you may be stuffed. Serve with a lean protein... I ate sardines this morning , but spared you all the fishy pick. Have a good day and I hope this helps someone wanting pancakes. Gluten free oats ground work for this as well." Update - add the same amount of baking powder as to the original TH pancake recipe which is 2 tsp. baking powder. Hi, What is "1 ground oats"? I'm a newby

Could you explain how a crossover works? Is it for losing weight or maintaining it?

A crossover is when you mix your good fats and good carbs. It is still made of on plan ingredients though - a piece of sugar laden cheesecake, for instance is not a crossover, even though it has a mix of fats and carbs. It is actually a "cheat."
Crossovers are to maintain your weight, gain weight, or to slow down weightloss if your're losing too fast. You will notice different results depending on how often you eat crossovers.

Good morning. I'm a newby and wonder if I could grind steel cut oats in my Vitamix to make acceptable oat flour.

You could if it works. I don't know how the texture will be, but if it turns out well, you can use that to make your oat flour if you want.

I made these tonight for dinner, but forgot to take a picture. Will do that next time. They were sooo yummy! Looking forward to making them again and again. I think these are now my favorite pancake. Going try them as waffles next time. My only issue was in the book Pearl and Serene say the batter is thick, mine was not. I did the recipe exactly the way they said, not sure why mine was thin. Any suggestions?

This happens sometimes... I'm really not sure why though. It was thin the fort time I made them, actually, but it's plenty thick usually.

Made these this morning, not because of a dairy allergy but because I can't stand cottage cheese and they were surprisingly very good. One thing though, the initial batter was really runny so I added a scant half teaspoon of xanthan and...in one second they were too thick! I think I will get 4 pancakes out of the recipe, max! Next time I will just mix it all up the night before and pop it in the fridge...sans xanthan. lol But topped with 0% Greek yogurt and blueberries made this a very nice Sunday morning treat. Thanks! Also saw someone asking about making oat flour in a Vitamix. I did that with the oats in my Blendtec and had great results.

You would never notice the cottage cheese in these pancakes, it smooths out completely and no 'taste'. It's just a great way to get protein in them. Glad you enjoyed it.

Good to know. I just never buy it, but maybe I'll try a 500mL carton of it and try this and that cottage berry whip.
