I tried this twice and here are my results:
The first time I tried a different brand of organic maple extract. Way too bitter! We had to throw it out. Then I tried the Cook's Choice brand today, and it is much better. I tweaked the recipe a bit:
Bring 2 cups water to a boil in a small saucepan, then wisk in: 5 Tablespoons xylitol (I used xylitol because my husband prefers it) 1 small sprinkle NuStevia 3 Tablespoons Cook's Choice maple extract (it really is 3 Tablespoons) dash sea salt 1 teaspoon xanthan gum, slowly wisked in
My husband loves pure maple syrup. I look forward to trying this sugar free version with him tomorrow morning on Trim Healthy Pancakes. He is getting slimmer!

I made it with cooks brand I had to add 3 Tablespoons too, I added a teaspoon of vanilla also.

I tried this recipe yesterday for our pancakes. My main reason for trying it was for my newly-diagnosed diabetic son. He loved it! The rest of us liked it, too. Thanks!
