Can a different flour be used? I don't have almond flour, but would love to try these. Would grinding almonds make almond flour?

You can use all flax if you don't have the flour. I would think you could use coconut flour also. They give a couple of variations in the recipe itself.

This morning I used 1 tbs cocoa, 1 tbs flax, and 1 tbs peanut flour. I accidentally forgot to put the almond flour in it, and it turned out just fine.

i just realized that when I said I used all flax it is with the cocoa one. That may even be how the recipe is written. THis morning I used 2 flax, 2 almond flour, lemon extract. it was pretty good!

Can't wait to try this recipe. We ditched the microwave a couple of years back. It is so funny, when my father comes over he gets frustrated he can't reheat things. I laugh because we didn't have one growing up? How quickly we get used to our "appliances/devices" and can't live without them. Now if you mess with my coffee press? Well, that's a different story!

I've been making the chocolate muffin in a mug. I finally branched out and tried the banana nut. WOW! I loved it, probably more than the chocolate. I used 1/2 tsp banana extract and a small handful of walnuts chopped up. I mix mine in a bowl and then butter a ramekin and bake it in that in the toaster oven. We got rid of our microwave a long time ago. Emily is wishing we had it back now.

Good idea using the toaster oven nancy, how many minutes? It's usually 10 minutes, but the banana nut one today took a few minutes longer for some reason.

The banana nut muffin I bake in the toaster oven at 350 for 12 minutes. The chocolate one I do for 9 minutes. I woke up this morning ready to have the banana nut muffin. I NEVER look forward to eating in the morning, I usually dread having to figure out what I need to eat, just because I know I'm supposed to eat something.
