Dirt Dessert. You know, that dessert made with pudding, cream cheese, and crushed cookies. I love it, but, of course, it isn't plan approved. So, I made my own version! This is very rich!
1/2 cup almond flour 1 egg white 1 heaped TBSP cocoa powder Sweetener (I used Nustevia) 1/2 tsp baking powder dash of vanilla ------------------------------ 1 1/2 cup Choco Pudding (THM pg. 366) made before hand 2 oz cream cheese, softened 2 TBSP butter, softened 1/4 cup heavy cream
Preheat oven to 325 degrees. Mix the first 6 ingredients together well, using however much sweetener that suits your taste. I used at least 4 shakes of nustevia. Roll the dough out to be about 1/4" thin or so on a parchment papered cookie sheet. Bake for 11 minutes. Let cool.
Blend cream cheese and butter well. Add Choco Pudding and mix it in good, too.
In another bowl, whip cream with some sweetener until it is thick.
Crumble your cookie into the pudding mixture and fold it in with the whipped cream.
Chill and serve.

How would u change this up for a non chocolate lover? I would prefer PBS or vanilla or even banana type?

How would u change this up for a non chocolate lover? I would prefer PBS or vanilla or even banana type? You could try leaving the cocoa powder out of the crusty part, and use a different flavor of pudding. PB, banana, whatever you like!

About what size does this make? I usually double everything for a big family, but don't want to if it's already big.

Ha ha, Nancy. I don't know the answer to your question, but there have been a few soup recipes in THM that I have not doubled and, as written, they are more than enough for two meals for our family with 7 children still at home! I'm not used to that. It throws me off sometimes!

I have 6 children, 4 of which are teenage boys, and I doubled the recipe and it was enough after supper last night for everyone to get a little ramikin bowl of it. The younger 3 maybe had 1/4-1/3ish cup and the older kids and my husband and I more like 1/2 -3/4 cup. Of course, they were all wishing they could have had more since it was yummy! I 1.5 timesed the choco pudding recipe and didnt measure it, but it looked about right. My husband asked if I could bring this to church Sunday since we always have potluck and there are lots of yummy desserts he cant have.

this is awesome! thanks beth. you're a wonder! i love dirt dessert; it may have been a decade since i last had it. can't wait! did i say decade? i guess i'm getting older. i thought it was only my kids that aged. maybe i'm not so thankful for this post. teasing!!!
