There's nothing like a delicious, homemade scone. This one is a holiday treat. Since cranberries are in season (and they're so festive), I've been keeping loads of them stocked in my house. I had a craving for a delicious, homemade Christmas goody, and this is what I came up with. It goes wonderfully with a cup of Serene's Cranberry Wassail too. =) Cranberry Orange Scones 2 cups almond flour 1 1/4 tsp baking powder 1/2 tsp salt 12 shakes stevia extract powder 1 tsp dried orange zest 4-5 Tbsp cold butter, chopped into pieces 1 egg 3 Tbsp whipping cream 1/2 cup fresh or frozen cranberries Combine all dry ingredients in a mixing bowl or food processor. Add the cold butter pieces and combine with dry ingredients until the mixture resembles coarse crumbs. You can use your hands, a pastry blender, and pulse in the food processor. Add the egg and cream, and mix. Add the cranberries last, and mix. Place the dough on a floured surface (use almond flour, or some oat fiber perhaps). Press into a 1/2-inch thick circle, and cut into 8 wedges, just like you would cut a pizza. Place the wedges on a greased cookie sheet and bake at 350 for 10-15 minutes.

Thank you for posting. I just made them. They are so good! My only substitution was 1 TBS xylitol instead of the stevia, and I had to cook mine longer. My oven must not have the same calibration.
I loved this because it's so festive and easy!
