Thrilled to share this recipe for our dairy free Mamas. Leah Funk posted this to facebook with a picture but I cannot copy the picture. I know this is going to help so many with a dairy allergy.
"Hey there I thought I would post my recipe for dairy free THM pancakes. Ok here it goes, 1 ground oats, 3 egg whites, 1/2 cup almond milk or water, 1tsp vanilla ,1/2 tsp sea salt,dash do nunaturals stevia. Blend well in blender.. I use a vita mix... But I think most blender would do, and cook using method in THM book. You may also add more liquid if the batter is too thick. This makes 8 good thick pancakes ... Please only eat 1 or 2 or you may be stuffed. Serve with a lean protein... I ate sardines this morning , but spared you all the fishy pick. Have a good day and I hope this helps someone wanting pancakes. Gluten free oats ground work for this as well."
Update - add the same amount of baking powder as to the original TH pancake recipe which is 2 tsp. baking powder.

Thanks so much for this recipe. I have been wanting to try these SO bad, but my nursing 13 month old has a dairy allergy. Can't wait to try this version!

Has anybody tried to make these using egg replacer? I do use gf oats for my son who is gf and casein free and allergic to egg whites. Geesh.. Or maybe I will try this out this morning, and let you all know how it comes out!

I made them for my son...he didn't complain....they did not gt nice anf fluffy and brown at all...they were kinda cardboardish...but I gave him some strawberry "stuff" I used on my muffin in a mug and some whipped cream (he can have that) and he was happy.

I put the amount of baking powder recommended for the dairy version. These pancakes are awesome!! I love having the option of dairy and non-dairy. Usually I top them with slim belly jelly, but since I'm out of gluccie, today I made a berry compote (as per the nighty night custard recipe). A delicious start to an E day :-)

We made the Trim Healthy Pancakes tonight after church for a simple breakfast supper meal. They were great! We tried blueberry syrup made on the stove top. I subbed xanthum gum in place of gluccie. My hubby liked them a lot!

Some batches I make are quite runny but if you let it sit a few minutes it thickens up nicely.

I am thinking of trying to substitute flax for the egg whites. I have tried using flax in other recipes for eggs (NOT THM ones). would this mess up the fact that they are E and make them into something like a crossover, or not acceptable at all? It's just that eggs are expensive when you have to use half a carton to get 1 c of whites, ya know? Here is my idea 1 c cottage cheese, 1 c ground oats, 1 c ground flax/water (about 1 T flax per egg, then add water to make 1 c) plus vanilla, sweetener and 2 t baking powder. Any thoughts?

It would definitely be a CO because of the flax, which is high in fat. However, I'd love to know if it works! Have you tried it? It would be great for kids with egg allergies if it works.
