When the weather outside is frightful, bring on hot, hearty soups. This recipe really scratches the “give me some hot, creamy, goodness” itch that these colder months bring on, without destroying health or figure. I shamelessly rave about this recipe in our book which is bad mannered I’m sure but it’s hard not to get overly excited when recipes are delicious, easy and slimming so that’s my excuse. A few of our THM facebook friends have posted about it on our wall so I’m not the only one. Corey said, “Just wanted to say I made the Loaded Fotato Soup today and it rocks! If you haven't tried this recipe give it a go! It's simple and delicious!!” Amanda said, “No kidding - it was wonderful - and I never would have guessed it wasn't potato soup.” Tara said, "I made this recipe last week and it blew my hubby's mind. He could not believe there was no potatoes in the soup! I sprinkled a little chopped up ham on top and some green onions. We are eating SO GOURMET at our house since we got on the THM plan:)" Brooke said, "Made this for the family, they didn't figure out the switch, and I didn't tell them." Carol said, "I think it's even better than potato soup! Since its just hubby and I, one recipe lasts a few days. And I change it up a bit using different low fat laughing cow cheese. That chipotle one is yummy! But I also love the garlic flavored one. This soup also works well as an appetizer to any meal, when you want a change from salad. It fills you up so you eat less. Thanks for sharing so many fabulous recipes, Serene and Pearl!" The recipe is on page 295 and is so quick and easy to make. I put a little cheese on mine to have it as an S but it is also great as a Fuel Pull on its own. You could sprinkle with some Parmesan to keep within FP limits, If you are like Serene and the idea of a Light Laughing Cow or Weight Watcher’s cheese wedge as an ingredient is not really up to your purism standards, I’m not going to get hurt feelings. Check out Serene’s new recipe called Transformer Cheese Sauce, which she posted on our page a few of days ago. It can be easily made into a similar soup, but has her purism seal all over it. Here’s what Emily another of our facebook friends had to say about Serene’s version: “ Oh my goodness. Thank you so much for posting this, Serene.! I just made a fuel pull soup out of this with steamed cauliflower and some leftover mini meatloaf, and it was out of this world. Love it, love it, love it!” Enjoy your lunch Mamas.

thanks for the cauli idea instead of potatoes. awesome! i love how you (pearl) shared about you raving to meadow over this. so cute!
i found a similar recipe with cauli for clam chowder and adapted it th mama style. we had it two days in a row and the whole family loved it.
CHOWDER: 1/4 cup butter 1/2 cup onion, chopped 1 cup celery, diced 2 cups cauliflower flowerettes 3 cups stock 4 oz cream cheese 1 tsp himalayan sea salt 2 (6.5 oz) cans clams, drained 1/4 tsp glucommanan OPTIONAL: 4 slices of bacon, into small pieces
Place the butter in a saucepan and heat on high until it starts to brown. Turn on medium heat and add the onion, celery and cauliflower (and bacon if using). Saute for 10 minutes or until the vegetables are tender (and bacon is cooked). Add in the stock and scream cheese, whisk. Season with salt. Add in the clams (add in just before eating so they don’t get rubbery). Whisk in the glucommanan Makes 8 servings. sorry i can't find the original link that inspired this.

Thanks for posting this Family. As you know it would be an S but I'm sure very yummy. I would like to try that with a white fish of some kind maybe. So glad your family loved it.

I'm still loving the Fotato soup! My hubby loves it too and we've been having it at least once a week. We have both been totally shocked how versatile cauliflower is and how you can make them taste like potatoes. We are having a lot of family over on new year's eve and I'm planning to make Pearl's chili and Fotato soup. I'm betting they are going to love them both! Warning: be careful when you dash in some cayenne. I accidentally went a little heavy on it the other night. The soup was still amazing but midway through our bowls both of us had our noses start running. LOL

It really is an amazingly delicious recipe! I absolutely cannot stand cooked cauliflower, so I was very hesitant to try this dish. Now, I wish I had tried it sooner because you can't tell it's potato free and it's become one of my go to dishes.
