My whole family loves this recipe! I've done two attempts at the icing (Pearl's quick version) with mixed results, though. Is the 1 1/2 quarters of butter equal to 1 1/2 sticks? It has ended up bitter...I've tried sweetening it with only stevia extract...should I try it with the ground truvia instead? I made the last batch of brownie cake with no icing and it was still super delicious! You may need more sweetener than Pearl uses. I usually do, since I have a huge sweet tooth. You could try the ground Truvia too, as it might give a slightly different flavor.

Did you use unsalted butter in the icing? I didn't and I'm sure that's why the taste was off. I made am icing by combining cream cheese and PB flour. Delicious!!

Ya know, I just checked, and I think I used salted! I'll try changing that lol. Is it right to use 1 1/2 sticks?

Yes it is 1 1/2 sticks of butter. On thing I have heard Pearl says is their recipes with cocoa tend to be more "dark chocolate" than milk, so you might want to cut the cocoa a bit too

I made these yesterday. I used white baby Lima beans, turned out awesome, but will cut cocoa next time cause my family like more of a milk chocolate taste. Using the lima beans doesn't change from a S does it?

My children love carrot cake. Was wanting to sub the cocoa for shredded carrots and spices with a low fat cream cheese frosting, that would turn this into an E if I can get it to work right?
