If you love the Cheesecake Berry Crunch recipe from the THM book, you'll probably like this one too. I was craving that recipe last night, but had already eaten a heavy S dinner, and I didn't want to go overboard. I decided to try making the Cottage Berry Whip (FP) recipe, and I loved it! Then, I had an idea to pair some toasted, salted almonds with it, and I was blown away with the taste - very similar to the Cheesecake Berry Crunch.
The almonds make this an S, but it is a much lighter S than the Cheesecake Berry Crunch. You can control the amount of nuts you put in it, and the rest of it is FP. So it can be as light or as heavy as you decide. I just used a very small handful of chopped nuts. And, the volume of the dessert is a little bigger (which I love!), without extra calories.
Sorry, I don't have a picture this time, but I wish I did. =) I actually loved this so much that I ate it for breakfast this morning. Hey! It has berries ... cottage cheese for protein... almonds for a bit more protein... A healthy, nourishing breakfast! And it goes great with a cup of coffee. Yum.

I tried this yesterday for the first time and added in some almonds. I really liked the crunch the almonds gave it.
