I found this recipe the other day. It is so good! I used 1/3 less fat cream cheese. Also, I put whipped cream, a drizzle of strawberries (thawed, blended in a blender with a little sweetener), and a wee bit of melted Rich Chocolate Fudge on the top. Hi Bethandmom, thanks for posting this recipe!
I made it last week and it was a huge hit at my house. Even as I was apologising and explaining to my husband that it wasn't a "real" cheesecake (I normally make baked cheesecakes and haven't ever found a no bake variety I like) he stopped and said," I keep saying.. I LIKE IT!! Make it again!"
The things I did differently were to add a little flaxmeal to the base, which I could take or leave, and I had no whipping cream, only double cream (51% fat and not thickened with anything) and so didn't whip the cream, just stirred it through. To be honest, that was sooooo easy, and produced a nice, rich feel similar to a baked cheesecake, that this time I bought the double cream on purpose. Served with raspberries on top, it was a really bit hit in my house.. Thanks! :-)

I just made this except I made crustless mini cheesecakes in little ramekins and sprinkled the almond crust on top. Sooo delicious!
