The recipe on page 262 calls for cinnamon. I often sub that for cocoa powder for a chocolate muffin.

How much? The same amount as the cinnamon?

I know this isn't very helpful, but I am guessing that it would be quite a bit more cocoa than cinnamon. Cinnamon is quite potent. I would just a spoon of cocoa and then taste the batter. You can always add more cocoa or more stevia.

I just made the Easy Peazy Muffins from the book with 3 T. cinnamon, 1 T. ginger and some chopped pecans. Wow! Really yummy! I am wondering - what is that frosting on Serene's Chocolate Easy Peazy Muffins in the photo above?

I believe she used the Skinny Chocolate recipe, but with solid coconut so that it sets.
