I was looking for a pancake recipe that was more fluffy pancake like and less like crepes. I came across a flax meal recipe that I modified a bit. Because it's S, it can be topped with butter or peanut butter, and then you need to use a low-carb syrup such as Gwen's sugar-free berry syrup www.gwens-nest.com/family-favorite-recipes/sugar-free-berry-syrup-recipe/#This makes 4 pancakes, each with 94 calories, 7 g fat, 6 g protein, and <1 g carbs that count (i.e. not dietary fiber). Fluffy Flax Pancakes 6 T flax meal 3 eggs, beaten 1/4 tsp cinnamon 1 tsp baking powder pinch salt 1 T heavy cream 1 T water 1 tsp vanilla 1 shake nustevia Combine ingredients. Drop by scant 1/4 cup onto warm griddle, spreading pancake out slightly, and cook over medium heat.

Mmmmmmmm...thanks! I'll be adding this to my repertoire. It would be nice to have some butter with my pancakes.

Made them this morning, and added whipped cream and a few blueberries, I put too much stevia in them, but LOVED the consistency, and can see this becoming a staple Thanks so much!

Glad several of you liked it. I'm a peanut butter pancake girl, but am having trouble losing right now and am trying to skip that for now. This is really good with butter and Gwen's sugar-free berry syrup! Someday when I've lost more weight, I'll have to try peanut butter and making some sugar free maple pancake syrup :-)

You can mix peanut flour, stevia, a pinch of salt, and water together to make a peanut butter like syrup.

I'll have to try the peanut butter like syrup. Might add in some maple extract too :-)
