I made these this morning. For those like me who can't have both Dairy & Egg: Ingredients: 1 TB Chia seeds (Soak these overnight in 1/2 cup water with 1 TB apple cider vinegar) 1 TB Flax Meal (Soak 2 minutes in 3 TB water) 1 Cup of OF Oatmeal (blend to make flour) 1 pinch salt 1 tsp sweet cinnamon* 1 TB Baking Powder 1/2 cup water Mix all ingredients above - and follow remaining recipe as directed. I made a blueberry sauce by mixing 1/2 cup blueberries with 1/2 cup water, gluco & favorite THM sweetener. - whip up while pancakes are cooking on griddle. I place pancakes on the plate and smother with the entire amount of thick blueberry sauce - yum - a wondrous breakfast! These are probably a little denser than the normal ones - I have not tasted those (since I can't! *Sweet cinnamon is a different type of cinnamon that is available through Mountain Rose Herbs. It is not sweetened - it is naturally sweet and much less pungeant than American Cinnamon. This is the cinnamon I grew up with in another country. So, glad to have found a stateside source for it. This cinnamon is also good to make your own cafe vienna with - so pleasant. This naturally sweetens your recipe so that your pancakes need no other sweetener on their own. Even as a Whole Grain Jane I never sweetened my pancakes with anything other than the sweet cinnamon. Blessings!

This is going to be a crossover recipe. There's too much fat with the chia seeds and flaxmeal for it to be an E food. Now, if you don't have much weight to lose and/or you don't have them frequently, that might not be a big deal.

Thanks for letting me know- I probably won't make them again - I am allergic to dairy and chia and flax are egg replacers.

Sweet cinnamon is also called Ceylon cinnamon. It is actually the true cinnamon. The cinnamon most commonly sold in the states is Cassia cinnamon. There is quite a difference between the 2, but I love them both.
