Tonight I made Garlic Cheese Crackers to go with the Hearty Red Soup. They turned out great, so I thought I would share the recipe. 2 1/2 cups Almond Meal (from Trader Joes) 1/2 tsp sea salt 3 tsp granulated garlic 1 cup shredded cheese (I used a Mexican Blend) 1/2 cup cold butter, cut in small pieces 2 eggs Preheat oven to 350. Grease a cookie sheet or cover with parchment paper. Mix Almond Meal, salt, garlic, and shredded cheese in a mixer. Add butter and mix on low for a few minutes. (The idea is to cut it in until it resembles cornmeal, but it doesn't exactly do that with the Almond Meal, so just mix it for a few minutes.) Add the eggs, and mix just until the ingredients come together, 1 minuted, maybe. Form dough into small, nickle-size, balls and flatten on the cookie sheet. You can place them close together because they will not rise. Bake in 350 oven for 15 minutes or until they start to brown. Let them cool for a few minutes, then enjoy. They are crunchy, and were very good with the soup. Attachments:
