I wanted to make the low carb pancakes but I can't have dairy (they called for ricotta cheese). Today I invented my own using that recipe: For one serving of 3 mini pancakes: 1 egg 1/4 cup pumpkin puree 3 Tbsp. flax meal or do half flax meal and half almond meal (I like it with the almond meal mixed in) 1/2 tsp. baking powder pinch salt sweetener to taste 1/2 tsp. cinnamon 1/4 tsp. nut meg 1/2 tsp. vanilla extract Mix together. Fry slowly with a very little bit of oil on skillet until browned on both sides and cooked through. Very yummy and melt in your mouth!
