Hello,THM !!! I have stumbled upon. An awesome recipe . Mexican beef and faux potato melt In 9x13 casserole pan, put 2 bags of frozen cauliflower. In and drizzle. 2 tbsp olive oil over and sprinkle. 1 tbsp. Taco seasoning, then toss well. Put into a 425* oven. For about 35 minutes. While cauliflower is roasting, Brown 2 lbs. Ground beef or venison in skillet. Sprinkle on onion and garlic powder and salt to. Taste. When browned. Pour in 3/4 cup of water and add 2 tbsp taco seasoning. Stir to combine. When cauliflower is softened,layer the meat on top of it,then layer salsa,and last cheese ( shredded) sprinkle green onions on top. And put back in oven for 5-7 minutes to melt cheese. Serve with sliced avocado and sour cream. ** original recipe calls for 8 med sized russet potatoes ,peeled and cut into cubes. 1/2 inch. Roast the same way. I made it this way for my kids and the faux version for my husband and I and there were no leftovers Enjoy !! God bless!!
