I'm trying to get started, but am also trying to use things I've already got on hand. What about Cream Cheese? (I have low-fat and regular, if it matters.) It wasn't in either the S or E dairy lists, UNLESS it falls under "all cheeses" in the S lists?

I don't see it in the lists now that you mention it, but I know that it's used in some S desserts (cream pops and cheesecake) so I have been assuming that cream cheese is S.

Yes, even though we normally use 1/3 less fat as it is easier to work with and less calories, it is still considered S.

You can use fat free for E but we don't like it. It doesn't taste great to us.
