I'm having a really hard time believing that purist Serene uses a non-stick pan for cooking the flatbreads. Please, say it isn't so! If I used my usual cast iron griddle with the teeniest swipe of oil will they still be 'E'?

Yes, that will be an E but Serene uses the green non stick pan you can now buy at Walmart. She loves it. It does not have that nasty teflon stuff. I'll get her to post about it today. Her baby has issues with her posting very often.

I'm interested in learning about the green non-stick pans, too. Hubby and I were just talking yesterday about buying some pans to take back to Uganda (the ones there are SO expensive!)!!

I made it to Wal-Mart today, and I think I know which pans she uses. They are called Green Life, and they are ceramic-enameled and don't seem to have the usual nasty non-stick chemicals. At my local store a 10" frying pan is $18 and change.

At my local store a 10" frying pan is $18 and change. Those are them! There is a new blue version out too made with something different.

Do any of you know if the Green Life can be used on an induction stovetop? I know it's a long shot. It would say on the packaging what it can be used on. The only ones I have seen online that work for an induction are WAY more expensive. Another question: for the recipes, if you can only get one size non-stick skillet, what size is best. (8, 10, 12 inch?)

I have read the uses on the box of parchment paper and it states that it works for fat free cooking. I have not tried it because I'm still waiting for my book. It says put the parchment into the frying pan. No fat, no mess, and no Pan to wash. Im going to try it once I have the book. Sounds like a good quick and cheap plan to me.

Ok, so I bought a green life pan. Yay! It works amazingly (so far ). Do ceramic pans need any special upkeep? (E.g. No metal utensils, no soap, non-abrasive cleaning, etc. I've never owned a ceramic pan before.
