I'm sure I'm not the first person to try this...but had to share about my breakfast this morning. I made a cinnamon muffin in a mug using 2 T flax, 1 T almond flour and 1 T cinnamon. I baked it in a small rectangle pyrex pan (I think it's around 4x6) at 350 for about 12 minutes. I don't do microwaves. Then I cut it in half to make two cake layers and layered it with icing made from 1 T cream cheese, about 2 T greek yogurt, a little stevia and dash of vanilla. Oh. My. Goodness. It was like eating a huge piece of layer cake for breakfast. I love the muffin shape, but I am a cake person and this felt even more like dessert. Definitely going to make it again, and I think I may even try it on my picky family and see what they think. I may start out with more almond flour and less flax, since they hate anything with an eggy/flax texture.

Yum! I'll have to make that soon! I made the easy peasy cinnamon muffins recently and have been on a cinnamon kick ever since
