Necessity is the mother of invention.... It was necessary to have some THM cookies today. One of my favorite treats to make is the Peanut Butter Chocolate Cookies found on page 387 in the THM book. Oh no! I didn't have any peanut butter. (Well, I did have some but it had sugar in it.) I did have almonds in the freezer. I went online and found a DIY article on how to make almond butter. I followed these instructions found at this link:http://detoxinista.com/2012/09/how-to-make-homemade-almond-butter/ It took a 1/2 hour to make the almond butter... I added a 1/2 teaspoon of sea salt. Then I experimented and exchanged peanut butter for almond butter. I use a 2-ounce scoop to make my cookies, then I pressed them flat with the bottom of a drink glass. Then baked. They have just come out of the oven. They have a little pool of oil around each cookie. I may add a bit of almond meal or flax meal to it next time to help balance the oil... Hmmm, they smell good. I just ate one... they are delicious. If I try it again with tweaks, I will update this thread. Good job all you mamas! Keep at it!!! Blessings, The Splash Wife

Tonight I found myself once again without peanut butter. Sigh. So I knew I could make almond butter... I still had whole almonds in the freezer. But I've been busy all week and all today... so I was thinking of SHORTCUTS. Instead of spending 1/2 hour making almond butter, I spent 1/2 a minute making almond meal. I didn't quite have 8 ounce... so in went 1 ounce of flax meal to round out the amount of peanut butter substitute. This was fast becoming something else. Hmmm. A bit dry while mixing... think think think so I added some melted coconut oil until the concoction turned into something that resembled cookie dough. Heh. I baked it at 350* for 12 minutes and they smelled WONDERFUL. They looked a bit strange. The coconut oil came up to the surface of the cookies in places and turned whitish. But they taste fine. I've eaten 3. Gonna stop eating them now and pack them up. Well I don't know if this will help anyone but... substituting mostly almond meal and a bit of flax meal for peanut butter for the (original) Peanut Butter Chocolate Cookie (page 387) sort of worked.
