I made macafoni and cheese a few days ago and due to being busy with the rest of the meal I rather over-simmered the cauliflower. My kids were not thrilled with it. I found it tasty but mushy. Enter the immersion blender and more unsweetened almond milk. I blended the whole pot up into a delightfully thick and hearty soup! Perfect. I may overcook the cauliflower on purpose next time! :-)
