I made this for an afternoon snack. It serves 3 - 4.
Cheesecake Whip
3/4 cup pecans chopped fine. Divide between 3 - 4 bowls.
Mix in food processor: 4 ounces cream cheese 1 1/2 cups Greek yogurt 4 Tbs. extra virgin coconut oil 1 tsp. xanthum gum lemon extract to taste stevia to taste Process, stopping to scrape sides, till nice and creamy. Layer on top of chopped pecans
In saucepan: 1 cup blueberries 1/2 cup water 1/2 tsp. xanthum gum (blended with the water first) Heat through and squish berries. Ladle over top of cream cheese whip.
Variations: I have not used glucomannan yet, but I'm sure it would be a better choice. We want to crumble up ginger snaps (pg. 389) next time instead of using pecans. Would that be good with Serene's cranberrry sauce?

Update: I realize I didn't put in there to sweeten the blueberry topping with stevia to taste. This is better served over crushed ginger snaps from the book, instead of pecans. I often multiply this recipe and put it into individual jars in the fridge for later (then the ginger snaps go on top). Also, I'm experimenting with adding beef gelatin to the mix (no xanthum needed then). Glucomannan would also probably be better than xanthum, but I haven't been able to get any yet.

Ok I am twenty weeks this week and it looks like I've gained 4 pounds this week? ?? do you remember when you had some weight jumps? Oh my! So has THM helped you not gain as much as a normal pregnancy? I am hoping so!!! Glad your doing good!!!

I lost at first, but put on about 7 pounds last month. (Weighed at 20 weeks.) I'm afraid I'll also gain a little more than I'd like to this month, too, because of traveling, etc. The first couple weeks of this month I planned my menus carefully (they are posted under menus) and walked, and gained very little. I do know I am lighter at this time than I was last pregnancy, as I weighed on the same scales since we got to our old place here in Missouri.

Sweetcrocs, I'm 20 weeks as well! Feels good to look and feel really pregnant at this stage. I think there were a few women concerned about a jump in weight around the 20 week mark. There was a post in the thread, Expecting Anyone?. She said that there is a large increase in blood volume at this stage of pregnancy which could be why there some experience a jump in weight.

It is kind of a bummer and you wonder if you are eating something you shouldn't be!!!! This is always my biggest weight time but I thought on THM it might be different! Nothing I can do thanks!!! We will just see how it goes!

That is funny because it has been an every week staple for me for about a month now!!!! I am making the strawberry shortcake with whip cream, German pancakes with whip cream, oh my I am loving it! I wondered how bad it was☺️

The main thing I would say, for us is to eat healthy, excercize, drink lots and hopefully have a healthy baby! It really helps me when I purposely eat every 2 hours, it keeps my amounts small and I don't get starved!

I made the cheesecake whip for dessert for my family tonight, but instead of the pecans just did a vanilla MIM and shared it out and topped it with the cheesecake mix and berry topping. It was so delicious. Thanks for the recipe!

This really looks good! Coming off a 3 week FC w/ no nuts or cheese this really sound heavenly. I love idea of storing it in the fridge in individual servings. So easy to grab & snack, yum!
