This is a recipe that is modified from the back of the mini pepper bag and it is so delicious! (and I don't even like peppers!). I made these last night and am now eating a few as an afternoon snack. Yum!
Cream Cheese Stuffed Peppers
1 bag mini multi colored peppers (I got mine at Safeway, but Ive also seen them at Fred Meyers (Kroger)) Softened Cream Cheese (I ended up using 16oz. in this recipe) Olive Oil Premade or home made Pesto Sauce
1. Preheat oven to 350 degrees 2. Cut mini peppers in half through the stem. Remove any seeds. Lay these open side up on a foil lined cookie sheet 3. Smear cream cheese into each of the pepper halves. 4. Drizzle Olive Oil over the cream cheese filled pepper halves. (I used my misto and lightly misted them with the oil) 5. Bake for approx. 12 minutes (peppers should be warmed through but still have a slight crunch) 6. Serve with pesto along side or drizzled on top.
I think this would be a great recipe to make for a New Years Eve Party!

What a great recipe! You could also do it with jalapeños if you like spicy to make your own poppers.
