I just threw some things in the crock pot and went to work. The tast was really very amazing I highly recommend it to anyone who likes green or yellow curry.
Ingredients: 6 boneless skinless frozen chicken breasts 1 bag of raw broccoli and cauliflower flourettes 4 Mushroom cubes (ice cube tray of frozen mushroom cubes I got from gwens-nest) 4 cubes of red and green bell peppers (im a sneaky chef mom so i have frozen cubes of everything!) 1 cube of frozen onion 1 can of unsweetened coconut milk 2 tbsp of curry powder salt and pepper
1. Throw the broccoli and cauliflower into the bottom of the crock pot because they will smell funny if they are on top. 2. Then add the chicken on top and the cubes on top of that. 3. Scoop the coconut milk over the top of everything. There will be chunks of coconut on top and the juice will fall to the bottom. 4. Then fill the can full of water and add your curry powder to it. 5. Stir it around in the can to get any leftover coconut and curry powder mixed and then pour over the top of everything in crock pot 6. Salt and peper to taste 7. Set on high 6 hrs (but I only needed 5 to get really well cooked chicken) 8. Once it was all cooked, I stirred it up, broke up all the veggies and chicken and added some glucomann powder to thicken it up.
My husband likes it over rice but I like it plain since I want to keep it an S-meal. Or would this be an FP meal? Makes about 12 servings. 198 calories per serving, 6.6g of Fat, 3.8g of Carb, 29.1g of Protein

This looks delicious! This would be a light S because it's just barely over the 5g fat mark to keep it in FP category. I'm on a FP day so I might make this & sub coconut milk from the carton (lower fat) & serve over konjac noodles. Thanks for posting!

We made this for dinner last night. I used the low fat boxed coc milk to keep it in FP territory & it was delicious! My family had it over pasta & I had it over konjac noodles. Everybody loved it!

So do you think If I served this over quinoa it would be a good E meal? Since it is pretty low fat naturally?

Yes, this will be fine to use for E, just stick to the potion size listed or the fat content will be a little too high. Or you could use watered down low fat coconut milk instead of the whole can, which will bring the fat down more.
