I am new here and actually just got this book for Christmas! Two of my four kids are severly allergic to milk, eggs, nuts and beef. They can't do goat's milk either. Their symptoms aren't just hives but they've almost died from consumption of these things. I'm really wanting to do this diet but I'm not sure how to go about it with them when we cut so much out as a family for their sake. What can I use in place of eggs for some of the recipes? I've always used unsweetened applesauce as a replacement before. We already do coconut milk as a replacement for milk products. Obviously, we can't do egg recipes in our home like omelets. I'm mainly referring to the recipes like the muffin recipes that ask for egg whites. What suggestions are there?

Unsweetened applesauce could be fine to use in recipes for your kids. If you're watching your weight you wouldn't want to do that. Perhaps you could use eggs in your own food, or if you want to completely avoid them you can try adding in a tsp or so of xanthan gum or glucomannan. They work as binders, so you could use that, and maybe some extra water if needed to replace the eggs in muffins. Do you eat flax seeds? You can use ground flax and blend it with water as a great egg substitute for baking. 1 Tbsp ground flax mixed with 3 tbsp water can replace 1 egg. Let it sit for 1 minute to thicken before using. You can also use unflavored gelatin mixed with boiling water (1 cup boiling water mixed with 2 tsp unflavored gelatin - use 3 and 1/2 Tbsp of this to replace 1 egg).
You can make this lifestyle work without eating any of those things your kids are allergic to. It will take some creativity, but you probably already have a lot of practice with that and are getting good at it. Just focus on what you can have. There are lots of other good foods to eat still. You'll get the hang of it!

I can sympathize, I have one GF and one DF. I am not sure I am ready to tackle another complete diet revamp:(. I will probably just fix stuff in bulk for myself, I don't mind warmed-up repetition:)
