Pecan Shortbread Cookies
2 1/2 cups almond flour 1/4 tsp sea salt 1/4 tsp baking soda 1 cup pecans, toasted and chopped 1/2 cup butter, melted 1 tsp vanilla extract 1 egg Stevia to taste
I believe this all works for a S style cookie but needed to be sure. Thanks. Makes about 24 cookies

Yes, I didn't write the directions at first but I suppose I better, so here is the how to with these cookies.
Mix all dry ingredients. mix all wet ingredients. Mix wet into dry ingredients. Place dough in the center of a large piece of parchment paper and form into a large log approximately 2 1/2 inches in diameter Place in freezer for 1 hour, or until firm, unwrap and cut into 1/8 inch thick slices. Place slices on parchment lined baking sheet Bake at 350. Bake for 5-7 minutes and then flip and bake another 5-7 minutes.
If you do it just right with the baking they are good firm cookie, if you over back :-( then they crumble and you have to add them to your ice cream :-)
