It is early in the morning and still dark outside. I had a rough night with my little baby who has a bad cough. As I comfort her nursing on our rocker I am comforting myself with a large chunk of "skinny chocolate". ( I amped up the recipe for the holidays and threw in chunky pieces of almonds and almond essence). Yes chocolate for the early a.m hours and not a tiny shred of guilt. I might even partake of a second piece just for good measure. I am enjoying a lovely soothing chamomile tea and the endorphins from the chocolate must be kickin in because I am no longer upset over a sleepless night. wake up my friends, it's going to be a beautiful day. It is that "skinny chocolate" that is to blame. I am under weight on my scale this morning and it must have been my chocolate binge yesterday. I might have to do something drastic and stop eating chocolate in order to gain some weight! doesn't this sound back to front? Studies show that after eating a single meal containing middle chain fatty acids that are found in coconut oil, metabolism remains elevated for at least 24 hours! So have a couple of divine chunks of "skinny chocolate" and for 24 hours you will have raised your thermogenic temperature, have higher levels of energy and will be burning calories at an accelerated rate. OOps, I might need to slow that engine down and do something like take a "whole Grain Jane" boot camp approach for the next day. Ha Ha. Love Serene.

I was too shy to post the entire way they I vamped up my holiday "skinny chocolate" in case I would put some people off from trying any of my future recipes. But as I was enjoying a third and fourth piece this afternoon I thought there would be some crazies out there like me who would find it beyond delish. To the original recipe I added the chunky almonds and almond essence like I said this morning but also added a hearty (not as hearty as the cocoa by any means) measure of hot chili's from my mothers garden which she had dried and crushed into a powder. To all of the above I also added an ever so scant hint of sea salt and poured the mix into ice cube trays. I stored them in the fridge not the freezer when they had their initial freezer setting. Taste bud extravaganza!

Me and My One Tracked Mind!
I just got off the phone with my sister Mercy, and now I am all hyped up about the whole “chocolate thing" again. I promised pearl I would move on and change the subject as I was getting a little obsessive and repetitive about it all. But I can’t help it. I am back here again...... stuck in a yummy chocolate rut. It is all Mercy's fault. She just told me about her new spin on our "skinny chocolate".
In mouth watering detail she told me about how she combined my two favorite foods together - coffee and chocolate. She ground her truvia to a fine powder, (that is her sweetener of choice, but I use the nu-naturals extract powder) along with a handful of freshly dark roasted organic coffee beans. She also added an extra handful of half crushed and whole coffee beans to give a satisfying crunch.
I am doing summersaults and cartwheels in that happy place in my brain. I just had to share! Sorry Pearlie........I will expect a phone call to put me back in line. She is the bossy older sister after all ha ha. Love Serene
