Made this today. I thought it turned out great! Kids don't like it though. They of coarse was wanting the white flour, sugar filled kind they get when we go to Ryan's steakhouse. So I'll be eating carrot cake for a week! I did think it needed to be a little sweeter. The recipe only calls for 1/4 teaspoon of stevia powder. Is that right? I used my Nunaturals and even added a little extra truvia because I didn't think it tasted sweet enough.

Maybe you could cut it in individual pieces and freeze for quick snacks later? (So you don't have to eat a whole cake this week!  ) I would probably use more stevia than that, but our individual tastes are sometimes different, as well as the kind of stevia maybe that each of us may be using.

alicia can you check your stevia ingredients? Maybe you can sweeten your frosting a bit more for this one and make a note to increase next time.
