Your menu looks good. It looks like you could use a little more protein, especially with the apple for your snack. You could try a scoop of cottage cheese, 1 tsp peanut butter, yogurt mixed w/ peanut flour, or a small handful of almonds to add some protein. The protein is important, especially in E meals to blunt the blood sugar spike that goes along with eating carbs. Your beef and broccoli Alfredo sounds really good, I'm going to have to add that to our menu this week
