Could the parmesan cheese be replaced with mozzarella? We don't have any parmesan on hand right now...

It would be on plan, it won't give the crunch that mozzarella would though, so it will be different, but still yummy and on plan

Mozzarella is just cheesy and gooey. Parmesan really gives a great crunch, its good on the green fries too.

If you have a convection oven, even a countertop model, you'll get the crispy texture. It cooks with hot air movement.
