We have tons of zucchini and squash from our garden and we are trying to find some good recipes to use it, so we tried this one. It did not turn out like a fritter. Can anyone tell me what went wrong? It tastes great, but is more like scrambled eggs / omelet.

Make sure you squeeze alllllll the liquid out of the zucchini. Put it in a tea towel and squeeze it as much as you can.
