Pearl chats: I do, I do! The reason is that I am a fat craver. Salads like my lunch today that have 1/2 a creamy avocado, an ounce or two of seasoned chicken breast and generously oily dressings, fill that place in me that longs for fat. Aldi had a great sale on hydroponic lettuces this week. The leaves are so soft and buttery and they wilt beautifully under an olive oil dressing. I used almost one whole lettuce for my salad, just too good! You know if you've read the book, I'm a lazy cook... a shortcut queen. I don't premake dressings. I just swirl on olive oil then balsamic vinegar followed by a little Braggs right onto the plate. Works great for me. I followed this lunch by some Hot Custard and now am Oh so satisfied. You'll still find plenty to eat as a Trim Healthy Mama if you're not a salad lover. But if you are - enjoy big time!
