Hi there,
I'm new to the forum and relatively new to THM. I bought the book last ?August and had great success with about 8 lbs of weight loss the first 4 weeks. I got derailed a little when my husband and kids didn't care for some of the recipes or recipe modifications (hubs doesn't like coconut oil and he and kids don't like the cauliflower in anything) and it was discouraging. I don't want to make two different meals every meal...so I'm trying to get back in the swing. I was looking at recipes and trying to make plan and I'm wondering if anyone has had success freezing the Bluberry coconut muffins or the easy peasy cinnamon muffins? Was thinking about those as quick grabs and go things...and I'm wondering if anyone else has suggestions for things like that I could make a bunch and freeze. One of my pitfalls is not having think to grab quickly, I'm a stay at home mom of two busy little boys and sometimes just need something fast. I think if I can make easy plans for the day for breakfast, lunch and snacks for my self- I can get dinners figured out with all the recipes I've collected on Pinterest and blogs as well as several I have found success with from the book.
On a side note, I have had zero success with store bought coconut flour, everything I've made with it come out super dry...we live in Arizona and I don't know if the dry climate affects it but I've sifted it and decreased amounts or increased liquids and every time it's turned out awful! wondering if maybe I just don't like coconut flour..?

Yes I have found the muffins freeze great. I also like batch making things like that to grab. Special Occasion Chocolate Cake I think is super yummy for that as well as the Cranberry Upside Down Cake in the Pearl and Serene chats area Coconut flour is a little tricky, I like it but it does soak up liquids like crazy so the recipes have to have that in mind. Maybe a dry climate effects it as well, might be worth adding a bit less than it calls for for a test? Have you tried refined or expeller pressed coconut oil, it has no coconut flavor or scent?

Thank you for the response! I'm about to make some muffins now to freeze and will check out the other recipes your mentioned I'm not sure about the coconut oil...? I have Nutiva brand virgin...from costco. Do you have a favorite brand?

I like the Nutiva for virgin, I get it at Costco as well I also like to have expeller pressed/refined for uses where I don't want the coconut flavor/scent. I personally use Wilderness Family because I live in a small community and order many of my groceries from Azure.
