Ever heard of shakshuka? Well, it's a SUPER popular Israeli dish that you can find just about anywhere over there, and it's basically eggs poached in a spicy/savory tomato sauce, and it's my new favorite thing (makes me feel all multicultural and cool).
However, since tomato is a big part of this recipe, my mom and I were concerned as to the carb count, and I couldn't find nutrition facts on the website anywhere.
Here's the recipe:
1 tbsp olive oil (for cooking the veggies) 1/2 medium brown or white onion 1 clove garlic, minced 1 medium green or red bell pepper 4 cups ripe diced tomatoes, or 2 cans (14 oz each) diced tomatoes 2 tbsp tomato paste 1 tsp chili powder 1 tsp cumin 1 tsp paprika Pinch of cayenne pepper Pinch of sugar (obviously we used a plan approved sweetener instead) Salt and pepper to taste 5-6 eggs 1/2 tbsp fresh chopped parsley (optional, for garnish)

I think tomatoes are listed as safe for S meals, but when you want a deep S meal then tomatoes have too many carbs to be true S. I would personally not worry and use them.

That seems like moderation to me as well, I also think it sounds really interesting and would love the rest of the recipe
