I've got a recipe that calls for 2 lbs of fresh strawberries to be used in a mousse... but its kind of confusing to work out where the carbs will hit in the finished product. Let me explain:
The recipe starts with 2 lbs fresh strawberries. They remove 1 cup (to be used as a garnish later). Then the remaining strawberries are chopped, sweetened and left to expel their juices. This is supposed to yield about 2/3 c. of juice, which is then divided, 3 T is removed and mixed with gelatin, the rest is concentrated down to 3 T. The berries are then pureed, strained (supposed to yield 1 2/3 c) and added to the concentrate/gelatin mixture (pulp and seeds are discarded). Cream cheese and fresh whipped cream are mixed with the strawberries and so on and so forth. It serves 6.
So yeah... I'm totally stuck as to whether this will work. At least I know I can sub the sweetener. *sigh*
Simple math says 2 lbs = 32 oz / 6 = 5.3 oz < less than the 1 c. limit for an S setting. But I'm not sure its that easy in this case.

I would think so.... but you could do a smaller serving if you are worried. I would probably measure the 2 pounds of strawberries to make sure for myself.

I would do the same as Rebekah, measure the two pounds (I am guessing it will be close to 6 cups) then you will know if you need to divide by 6 or more servings to be S
